FSMA preventive controls
Under the FDA Food Safety Modernization Act, the Preventive Controls for Human Food rule (21 CFR Part 117) requires a written food safety plan with identified preventive controls, monitoring of those controls, and records that monitoring occurred. Allergen preventive controls are named explicitly.
The rule asks for evidence that a control was monitored — not for a particular technology. A retained frame timestamped against the lot, produced by a model whose identity and version are recorded, is the shape of evidence that requirement describes.
Juice and seafood operate under separate HACCP regulations (21 CFR Parts 120 and 123), and USDA FSIS governs meat and poultry rather than FDA.
